A florist sells little over the counter and a lot to order: the bouquet that has to be delivered on Saturday at eleven to an address, the wreath that has to be at the funeral home by seven, the centrepiece for next month's wedding.
That is why the order is the centre of everything: it is written down with its day, its time, the address, the message on the card and the deposit. Every morning out comes the list of what has to be made up and what has to go out, in time order.
And the rest: the plant sold over the counter with its barcode, the seasons —All Saints', Sant Jordi, Christmas— that are prepared weeks ahead, and what is paid up front and what is paid on delivery.
